Al Volo (On the Fly) utilizes a vigorous mixed Saison culture and is dry hopped with Mosaic, Citra, and Azacca. This Brett Saison has delicate floral and barnyard notes and a round tropical and pit fruit character that carries on sip after sip.
The first release of our new mixed fermentation program, in collaboration with the incredible Octavio “Parmesan Papi” Pauley of the much anticipated @bevabrewing!

On tap at Beva, pours a cloudy golden with a medium white head. Aroma is quite citric, with some herbaceous notes, subdued rustic notes, some sulphuric (farty) notes, and light brine. Flavour is rather briny, with lots of lemon, some bring herbaceous notes, moderate acidity, and not a whole lot of wild buggy character. Not egregious but there's too many flaws here.

Pale, yellow and slightly hazy, a bit yoghurty but not in a bad way, some dh for sure, I'�m getting a weedy, lemony note, ok the base could be better but for a first stab at mixed ferm this is good.

Cloudy pale blond colour, highly carbonated, with large head. It's a bit farty, but not enough funky; a bit lemony. The mouthfeel is smooth; it's more sour than funky, sharp lemon, some metal.
Not bad, but it feels like a shot in the dark.

750ml @ Alex's. Appearance: hazy blonde with a white head. Aroma: lots of dry hops, some lemony notes, and maybe a bit of Brett. There's some rust acidity as well. Taste: along the same lines. Overall: I am not sure what the purpose of dry-hopping saison is. It makes them to be similar to the simple kettle sours by killing all of the barnyard and rustic notes, which should be present in the proper farmhouse Saison.

May 11, 2025 (7/3/8/3/15=3.6): Re-rate from bottle. Poured from 750mL bottle (shared with Nova Scotia's CaptainMurphy & fiery1). Hazed blonde gold with full white head. NIce citrusy lime gose note with feint remnants of dry-hopping, hint of sulfur nose as it warms. Not farmhousy, but interestingly nice gose/saison mix.
Jan 05, 2024 (7/3/8/3/14=3.5): Poured from the tap. Hazy yellow with small white head. More detailed notes to come. Bottle condition maybe, tap no fomo.
