Imperial Stout aged in Elijah Craig 12 Year Bourbon Barrels

Deep within the recesses of the alcoves and antechambers of Oakshire Brewing lies another realm. It is a place where carefully fermented beers are laid to rest in oaken sarcophagi. They slumber for eons only to emerge as whole transformed entities, fuels for the malformed creates that populate the blasted and eldritch waste of… Hellshire.

Hellshire XII begins with a base of our coveted triple-mash imperial stout, Free Your Soul. With a starting gravity of 36 Plato, the beer was fermented to just over 11% ABV. Laid in freshly dumped Elijah Craig 12 Year Bourbon barrels, it slumbered for 20 months before a blend was selected for release.

Pouring jet black, this as motor oil with a deep brown head, Hellshire XII leaps from the glass with a bouquet of dark bakers chocolate, well-worn leather, pipe tobacco, and dark fruit. The first sip brings a tongue-coating richness followed by more dark fruit and chocolate, rounded out with coconut and vanilla. Finishing with a slight heat and deep tannic structure, our newest Hellshire is one of the most complex and exciting to date!

22oz @ Matt's (thx for the bottle, man!) new place. Appearance: very dark brown with a dark brown head. Aroma: American oak, candies, some dark fruits, quite sweet. Taste: along the same lines, lots of American oak, chocolate, some vanilla, and some dark fruits. Light nice booze. Overall: quite complex and very nice!

22 oz. bottle, pours jet black with a tiny tan head. Aroma is intense, with deep roasted barley, molasses, largely fermented out dark sugars, and moderately bourbony oak barrels. Flavour is extremely massive, with sludgy roasted malt, subdued bourbon, somewhat fermented out dark sugars, and plenty of oak. Rather sludgy palate; the barrels come through more as oak than bourbon, and the finish is somewhat rough. It's good, but less so than the Hellshire average.

Poured from 650mL bottle. Black with small dark tan head. Vanilla, booze, mild chocolate, enjoyable.

Inky, medium brown body, no head. The aroma is honeyish and raisiny. Comes across like it's going to be really sticky. A fair bit of barrel on there. Not actually much stout character. On the palate, tannic, but very much that honey stickiness. Light vanilla, oaky, boozy, figs and other fruit notes. It's burly...the sugars kind of point in the direction of being refined, but this is not even close to refined. The alcohol dries the throat, and the tannins dry the tongue. Again, there's not much imperial stout character here; it's definitely more of a barley wine. Almost chaotic.
