Combining our shared passion of all things spicy, we decided our collaboration had to involve an element of chilli. We refermented our most tropical mixed fermentation golden sour beer with heaps of mango and passionfruit (330g/l combined). To this we added a blend of Habanero, Mulato and Aleppo chillies, adding notes of dried sweet, dried fruits, earthiness and a subtle tobacco smoke with a balanced heat.

375ml bottle, getting on for 2 years old. Hazy orange, rapidly dissipating white head. Aroma of passionfruit and mango. Taste of tart passionfruit and mango, quite sour, sadly no chilli, slightly earthy. Medium bodied. Fine, but a bit disappointing, and if the chilli has already gone after not even 2 years I don't see this one getting better with age.

Bottle at a friend's. Pours hazy orange, nose is passionfruit, mango, citrus, taste is juicy tropical fruit, peppery, chilli heat.

On keg at the Hanging Bat. Appearance - like breakfast juice. Nose - funk, apricot and orange zest. Taste - funky orange and apricot. Palate - close to medium bodied with a tangy and sour middle and finish. Overall - nice. More apricot than mango or Passionfruit.

On tap at Northern Monk Refectory, pours a cloudy dark muddled orange, no head. Aroma brings out tropical fruits, chilli, some sugars, and acidity. Flavour is sweet and sour, with plenty of spicy chili, sour fruits, and lacto. Seems like a cheap kettle sour with chilis. Not very impressive.
