We fermented this multigrain saison with a mixed culture of brewer’s yeast, Brettanomyces and lactic acid bacteria and aged it in oak barrels for two years before transferring it onto malbec pomace from the Okanagan’s Painted Rock Winery for further conditioning. The result is intricate vinous flavours interwoven with the complex funk and tartness of a mixed-culture saison. The Cabernet Franc version pours a bright ruby tint with a lighter palate of summer fruit and berries.

On tap at The Magnet, pours a cloudy dark amber red with a small off-white head. Aroma is fairly fruity, with soft red grapes, plenty of juiciness, light sugars, and low-level bugs. Flavour is simple, with soft res grapes, mild juiciness, some black pepper, and gentle hugs. Not much complexity here, but it at least doesn't have the grape juice character than No. 3 had. Tastes more like a grape fruit beer than a wild ale of any kind. Meh.

Poured from the tap @ Dageraad. Light-medium orangey red with small off-white head. Soft grape, mild berry sweetness, hint of acidity, light-medium body. Overall, both Enology 3 and 4 aren't as good as 2 so ultimately disappoint me a bit. Still decent, price point is okay, so worth trying regardless.

Pale purplish with haze. No head. Vinous nose, and a bit woody. The fruity is slightly mellower here than on the malbec one. A bit of bracing tartness, cut with sweet cab franc. Medium body. Probably not as complex as I would expecting.

Draught at the brewery
Red colour, lighter than Enology 3, with no head. It's juicy, but both grape and Saison character is milder than the Enology 3, it's more delicate, less sour, and therefore it's easier to drink, especially in this first hot day of the season.

100ml. Appearance: purple (noticeably lighter, than #3) with a rose head. Aroma: sweet grapes, a bit of cherry notes, less tannic than #3. A bit of funk and rustic notes. Taste: a lot of grapes, some acidic notes, some light sweetness, a bit dry. Overall: it's pretty good, but it seems to be less complex and interesting than #3.
