Barrel-Aged Wild Fermented Pale Ale
This barrel-aged and wild-fermented beer is an example of the magic that can happen when wild brettanomyces mingles with Pacific Northwest hops - in this case, Mosaic, Cascade and HBC 682 - and a dry-hop edition of New Zealand-grown Nectaron.
Inspired by Orval Trappist and historical English pale ales, Canadian 2-row wheat, Vienna and honey malts set the stage for a dry yet round ale fermented in stainless, then neutral barrels with an anomalous Brett strain, then bottle- and keg-conditioned for continued development.
Brewed in honour of our 9th anniversary, this ale showcases aromas of dried apricots & pear, flavours of pineapple, crisp honeydew and a balanced biscuit malt character.

On tap at Darby's. Pours hazy blonde with a white head. Gentle Brett on the nose. Flavour has fairly gentle Brett, lemon peels, gentle botanicals, some grainy malts, buttery oak. A bit attenuated. Nicely done.

Hazy, with a thin head. Pale, soft body. This has a nice sweet pale malt. Well made; I'd like more hop expression but it's well made.

Bottle pour at FHF 2024, pours a cloudy dull golden with a small white head. Aroma has some funky farmhouse notes, light sweat, and earthiness. Flavour is clean, with a nice subtle funky brett character upfront, light citrus, and rustic grains. Dry, rustic and lightly funky. Decent.
