The 2022 blend uses fruit from Jerzy Boyz Farm in Chelan, WA and foraged fruit from untended apple trees in and around the Seattle area. In the fall of 2022 we crushed and let the apple must* macerate on the pomace for additional extraction and mingling time for the native yeasts. Then we pressed and introduced an actively fermenting saison.
We let this slowly ferment over the winter. In spring we bottled and conditioned the blend with raw wildflower honey and Cassia bark. Tart fragrant wild apples with melon mousse and baking spices finishing with a lively texture.

Pale, dull, greyish. Soft body. Lightly acidic. Ok, balanced, with a good stone fruit character.

Bottle pour at FHF 2024, pours a cloud blonde with a small white head. Aroma has intense apple core, almost rotting notes, and plenty of wild funk. Flavour is much the same, with rotting apple core, wild funkiness, and a touch of sulphuric fartiness. Good apple core character but it's a bit chaotic and harsh. Decent.

FHF 2024. Appearance: hazy blonde with a white head. Aroma: some apples, crispy, a bit tart. Taste: along the same lines, some loght nail polisher. Tannic. Overall: pretty good.
