In 2019, Brothers Cascadia parked their coolship in our courtyard and we brewed a collaborative wort, inoculating it with local wild yeasts and bacteria. The beer sat in oak in our cellar for over three years before we blended it with a one-year-old mixed culture saison. We bottle conditioned the blend for
almost a year. And now, four years after the initial brew, Diamond Rain is ready to fall.

Hops: BSG Lambic Blend - Aged Hops, Mosaic, Strata, Wai-iti

Malts: Weyermann Pilz, GW White
Wheat, GM Flaked Wheat

Yeast: Spontaneous, Amalgamation
Blend, Lacto Brevis

From a bottle, pours a deep dark purple. A few bubbles. Musty dark berry fruit character. Dry and tart. Dark fruit. Earthy dry and sour.

500mL bottle, pours a hazy dull golden orange with a small white head. Aroma has a very nice buggy character, gentle funk, a hint of stone fruit, light tartness, and oak. Flavour has plenty of stone fruitiness, stone fruit pie, more subdued bugs, and oak. Not the most expressive wild yeast character on the taste; even though there's no fruit in here, it tastes like there's plenty of stone fruit. Almost get a bit of oxidation on the end. Decent.

Hazy, dullish colour. Not much head. Lots of bugs, brett and pedio. On the palate, it's a big phenolic and estery, but it's a nice bit of funkiness. A touch of tannin helps lend complexity to the finish. Moderate acidity.
