We’ve been aging beer in gin casks from Copperworks Distilling since we opened. Denise explores a new direction by utilizing spent plums from their famous Plum Gin. We transferred mature oak-aged beer to rest on these plums for four weeks, then refermented with fresh plums and pluots from Collins Family Orchards for an additional 8 weeks before packaging.
Denise is a harmony gin and fruit. Exhibiting big floral aromas of gin, Denise presents notes of grains of paradise, mint, fresh strawberries, Meyer lemon, cherries and plums.

On tap at Fair Isle. Pours murky pinkish-red with a white head. Light plums and gin botanicals on the nose. Flavour has a very earthy and juicy plum character with lots of botanical accents from the gin barrels, gentle acidity; the saison yeast more in the background. Interesting and enjoyable to drink.

Beautiful hazy plum colour. Thin head. Gin definitely is the big thing here, along with a light plum and some bugs. Good stuff. Effervescent, medium body with light acidity.

On tap at Fair Isle, pours a cloudy dark ros� red with a small white head. Aroma has plenty of gin barrels, tart plums, and some acidity. Flavour is very acidic, with tons of botanical, gin barrels, medicinal notes, and subdued stone fruits. Too much botanical, not enough saison base. Good but not at the level Fair Isle can execute.
