12 oz. bottle from Top Shelf Brews. Snifter displays a nice unfiltered gold with small white head, leaving lace down the sides. Nose is limes, lemon zest and a zesty spice. Taste is mostly identical to the nose with the addition of honey and dry grassy hops. Light pepper in the finish.

12 ounce bottle. Slightly hazy straw gold color topped by a small bubbly white head. Fragrant lemony malt aroma has hints of coriander and hay. Dryish citrus malt flavor with notes of wheat, yeast, more coriander and grassy hops. Their is an underlying funky, sulphury earthiness that adds a uniqueness to this ale. Finishes crisp and dry with atouch of lemon peel.

12 oz. bottle. Pale yellow, with a small, bubbly, white head. The aroma is lemons, hay, and some dusty, barnyard notes. The flavor is sweet and musty up front, with a bitter and sour finish. The palate is light to medium, astringent, dry, and a little grainy. Overall, this is a surprisingly funky and dry American saison, but the aftertaste is long, sour, and unpleasant.

Let me preface this review by saying that I went in really wanting to love this beer - given the quality of helios, who wouldn’t? - by the middle of my first bottle, I was trying really hard just to like it - now, by the middle of my second bottle, I am trying hard not to hate it - first of all, it is not a saison - it is a dry wit - usually, I can be forgiving of adjunct-laden saisons - I had a local one recently that had quite a few adjuncts, but still managed to be quite tasty - perhaps because this is overspiced to the point of being unrecognizable as a saison, I cannot be forgiving - I like the dry, crisp character of the beer - however, all I can taste and smell are spices and a hint of tart citrus - overly bitter throughout - where is my baby helios, god dammit!?

Somewhere... 12oz: Pours light golden with a white head. Aroma is farmhouse funk, flowers, and spice. Taste is bitter at the front. Funky. Full saison taste with a light body. Some aftertaste. Almost no sweetness.
