Saison Brewed with Spelt and Triticale and Bottle Conditioned with Brettanomyces.
Will Be is our flagship saison and the purest expression of ethos of our brewery. A physical manifestation of our pursuit of making honest, succinct, fermentation driven beers. It is teeming with aromas of juicyfruit, mango, banana, peach pits, and almond paste.

Pour from a can kicks up a lot of foam. Slightly chlorinated nose that drives off after the first pour. Tropical fruit pits, flower leaves and a bit of wheat malt follow up. Taste is light and crispy, almost "normal." Some malt spice. A light bitterness that seems more from a bit of kettle sour than any specific hop. More of a general saison than a horsey Belgian brew. Just fine as a table beer.

Keg at the brewery. Pours hazy yellow, nose is floral, grapefruit, citrus, spice, taste is similar, fruity, spiced, refreshing. 7/8/8/8/8

On tap at the brewery. Cloudy golden orange with white head. Nice earthy, estery saison, bit spicy, floral.

On tap at Begyle, pours a hazy blonde with a small white head. Aroma brings out a nice floral character, light esters, and gentle rustic saison yeast. Flavour is fairly dry, with rustic saison yeast, light esters, and some floral notes. A bit too dry and muted but decent utilization of the yeast. Solid.
