Tesseract is a culmination of inspiration, hard work & patience. We brewed our house golden sour and fermented it with a mixed culture in foeder 4, after primary fermentation finished we moved this beer into four ex-California red wine barrels with pinot gris grape must for 18 months. Once it finished maturing in the barrels we then moved it into our funkiest foeder, foeder 2 to mature for another two months. What has been packaged is a very bright, acid forward beer with complex notes of citrus fruits, oak, and wine, followed by a flavour of starburst, bright acidity, pinot gris grapes and a bone dry tannic finish."

[notes] Poured from the tap @ FHF 2023 (Aug 12, 2023). Clear-ish gold with small white head. Harsh oak wood, mild pinot gris, okay.

Hazy and pale. What's funny is i get a little jalapeno here on the nose. There's no chile in this beer so it's just a funky ferm thing. Slightly yeasty on the palate, not bad, and the beer comes together with a fair bit of funk.

On tap at Farmhouse Fest 2023, pours a hazy golden with a small white head. Aroma brings out white wine grape skins, wild yeast and some oak. Flavour is full of earthy twig-like wild yeast, white wine grape skins, and oak. Complex and integrated. Good stuff.
