Alright, so we know our DDH Pale Ales are the underrated full bodied, high juice arm of the brewery all our brewers love - how do we take them to the next level though? A 45kg dry-hop charge of Citra, Mosaic, Cryo Simcoe and Idaho 7? It's a good idea, but not quite next level. How about the whirlpool? We've tried regular T-90 pellets on their own, we've tried Cryo hops on their own, what happens when we make a combination of the two? Layered bitterness on top of our usual Polly's high juice is what happens! A double addition of 5kg each of Idaho 7 and Cryo Idaho 7 in Bonnie create a beer that zaps with clean bitterness to start, brings in the usual Polly's tropical notes through the middle, and ends on a final crescendo of pithy citrus peel. Incredible.

Can sourced from The Fuss Club and drunk at home (31/05/2022) - milky opaque yellow with a creamy white head. Getting a blast of juicy stonefruit with loads of nectarine, mango, apricot, some pithy citrus rind bitterness, dense sweet malty backing, solid hoppy finish. Lovely stuff.
