Weissbier 5.5% We of course had to name a beer after our favorite Bavarian Adam Weishaupt, founder of the Illuminati. So it follows it should be a classic beer of Bavaria.

Clear, Slight Cold Haze Cloudiness, Pale Yellow Color, Big White Soapy Head, OK Retention, Thin Runny Strings of Lacing. Wild Yeast, Floral Aroma. Wheat, Sour, Wild Yeast, Mellow Floral Hop Bitter. Same In Aftertaste: Wheat Sour, Wild Yeast, Mellow Floral Hop Bitter. More Like a Saison than a Weissbier or Hefeweizen. Weird Oily Gooey Body, Never Seen One Like It Before. So, Pretty Bad As Hefe, But Pretty Good As A Saison... Nice Can Label. RIP Illuminated Brew Works. Enjoyed It. Worth A Try...

Sample glass at Standard Market. Light, slightly sweet malt nose without the usual clove or banana. Bit of haze with a thin head over yellow body. Taste had some coriander and maybe, what, hazelnuts? Kumquat? Turns out to be off even for a lower alcohol weizen. The recipe just needs more work.
