Aged collab with the fantastic folks at Highland Park in L.A. We threw a bit of piney/earthy chinook & fruity simcoe hops & fermented with a blend of Cali Ale + Brett C. Resulting beer is tropical with earthy leathery complexities from the brett. We shared sandwiches. These last two kegs have aged about a month. Let’s taste the difference.

On tap at the brewery. Aroma has a lot of tropical fruit and lighter citrus with a cracker malt background character. Some light phenolic notes. Pours a very hazy, pale gold with a small, white head that lingers for quite some time on the edges. Moderate lacing and small legs. Flavor is fairly tropical fruit forward with some light cracker malt notes and a hint of sweetness. Some medium light citrus and some tropical fruit in the finish. A dry finish with some light phenolic notes. Mouthfeel is medium light bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a nice very cloudy Brett IPA but it has a bit too much phenolics in the finish for me. Great tropical fruit notes.

The beer pours a pale straw-ish yellow color. It’s quite cloudy with a good-sized white head. Tons of lacing. Big, fruity aroma that is full of hops. Blackberry, melon, tangerine, strawberry, mango, peach, papaya. It’s a nice mix of sweet berries and citrus with tropical fruit flavors. Just a tiny bit of simple malt sugariness in the background. Quite juicy. The taste comes off a bit grassy when the beer is cold, but as it warms up, the flavors open up and a huge juicy, fruity hoppiness comes out. It’s strawberry-mango-tangerine juice with a long peachy, citrus peel finish. Quite dry but soft and extremely pleasant. Moderate to medium bitterness - it creeps up some. Soft feel with nice hoppiness. Lovely beer.
