Brewed with Prairie Artisan Ales

Chase Healey, founder and brewmaster of Prairie Artisan Ales, recently paid Off Color a visit to collaborate on a beer. Unfortunately, what Chase didn't realize is that a few pesky Prairie Dogs caught a free ride in his luggage. Upon their unintentional release in the brewery, the jerk Prairie Dogs promptly ran amok, harassing the brewers as they tried to mash in, calling Hops names and, ultimately, chewed through the main water source before they could be corralled. Not ones to be easily deterred, Chase, Dave and John brewed a beer without water resulting in this incredibly dry, deliciously palatable Tettnanger dry hopped farmhouse ale fermented with Prairie's saison yeast and Off Color's lactobacillus colony.

Light in body with average carbonation. Clean finish with mild Belgian yeast expression, further grassy notes, mellow doughy sweetness. Very nice.

Sampled @ CBC 2014. Clear pale golden color, small white head. Aroma and taste are like a mix of a saison and a brett beer. Saison, yeast, slightly lemon, slightly sour hints, maybe a touch of herbs, quite refreshing, slightly bitter finish. Not bad.

Tap at Jerry’s in Wicker Park. The beer is super straw pale, clear as a macro beer. Has a thick foamy head with a lacing that coats the side of the glass as it fades. Aroma is cleaned up sharp, but light, pear esters. Everything else is dulled down, or not there. Just a bit of Belgian sweetness. Flavor is same with a bit of a dry, sandpaper feel to the green, unripe pear esters. A mineral tingle all around with a slightly bittered wort finish. Basically a vehicle for light pear esters. I was hoping for something more.
