Chase Healey, founder and brewmaster of Prairie Artisan Ales, recently paid Off Color a visit to collaborate on a beer. Unfortunately, what Chase didn't realize is that a few pesky Prairie Dogs caught a free ride in his luggage. Upon their unintentional release in the brewery, the jerk Prairie Dogs promptly ran amok, harassing the brewers as they tried to mash in, calling Hops names and, ultimately, chewed through the main water source before they could be corralled. Not ones to be easily deterred, Chase, Dave and John brewed a beer without water resulting in this incredibly dry, deliciously palatable Tettnanger dry hopped farmhouse ale fermented with Prairie's saison yeast and Off Color's lactobacillus colony.

A golden beer with a yellowish head. The aroma has notes of malt, straw, and lemons. The flavor is sweet with notes of lemons, brettanomyces, and straw, leading to a tart finish.

Draught at CBC 2014. Clear hay yellow liquid with a medium white head. Aroma of white pepper, lemon, tropical fruit and perfume. Taste is dry and light sour with notes of lemons and red berries. Light bodied with medium carbonation. Nice.

Tap at CBC 2014. Beer in the glass golden-yellow, small head. Malty aroma with notes of herbs. Starts mild-malty, spicy, notes of herbs, modest sourish. Not too intense. Well balanced finish, sourish-fruity aftertaste. Not bad!

Draught @ CBC 2014 [ Red Session ]. - Copenhagen Beer Celebration 2014, Sparta Hallen, Gunnar Nu Hansens Plads 11, 2100 Copenhagen, Denmark [ As Off Color Prairie Dog Attack ].Clear medium orange yellow color with a small to average, frothy, fair lacing, mostly diminishing, off-white head. Aroma is light moderate malty, pale malt, moderate yeasty, fruity, saison yeast, wood notes. Flavour is moderate sweet, light light acidic and light bitter with a long duration, light tart fruit - citrus, pale malt. Body is medium, texture is watery, carbonation is soft. [20140503]

Keg at the Copenhagen Beer Celebration 2014, red session. 03/05/2014. Yellow straw coloured pour with a fleeting fine white head. Aroma is lemon citrus, earthy, mineral and light touch of brett funk. Flavour is crisp lemon, light funk, lemon, straw, decent saision yeast character. Palate is crisp, some drying finish. Nice refreshing beer, interesting enough.

CBC Session 3. Bright clear pale gold beer, samll bubbly white head. Palate is light and crispy, semi dry. Nice floral start, winey tang in the mid. Mild citrus, well buried. Light crisp finish. Nicely joined up and tasty.

From tap. Pours clear and golden yellow with a small white head. Aroma is fruity and light toasted malty. Bitter, citrusy and peachy. Ends dry and bitter.
