Gose Style Beer
Most brewers spend a lot of time and effort keeping lactobacillus out of their breweries; it was the first thing we brought in (it still has to stay in the corner though). We blend together two different beers to make Troublesome. The first is a somewhat uninteresting wheat beer and the second is an overly acidic & funky beer fermented solely with lactobacillus. We blend the two beers together with coriander and salt at the tail end of fermentation to create a mild, lemony tartness and a fuller sensation of mouthfeel. And yes, it's hard to make.
Hops: Northern Brewer
Malts: Pils, Wheat Malt, Flaked Wheat, Flaked Oats
Secret Ingredients: Coriander and Lactobacillus

Location: Draft at Jake Melnick's, 5/27/14
Aroma: The nose is pretty sweet, a little fruity, with some saltiness, and an acidic funk
Appearance: It has a clear apple juice pour, with a fizzy off-white colored head
Flavor: The flavor is much the same, pretty sweet, but nicely balanced by funk and a little salt
Palate: The body is fairly light and easy drinking, with a pretty refreshing overall feel
Overall Impression: I really found this to be a pretty enjoyable beer. It was a pretty warm (but sadly rainy day), and I felt like this totally works as a different type of easy drinking summer beer. I can only drink so many blonde ales. This is a much more interesting low ABV summer beer to me.

Troh - bleu -sohmay. Initial presence is very nice, tart and such, Iβm liking. Yes, good tart fun but could be tarter, if thatβs a word. Funny old dishtowel smell. Perhaps they could just make this without the hefe and it be all funkey lacto, would be worth twice as much AFAIC.

Draft - Wheat with sweet syrupy honey. Pale yellow with a thin white head. Wheat, lemon and little else. Little buttery, not sure if that is intentional or infection.

Bottle. Pours a slightly hazy pale yellow with a white head that dissipates quickly to the edges. Aroma is mild with earthy wheat with some coriander and a hint of tartness. Flavor starts with sweet wheat and a bit of light tartness and a pretty strong tartness.
