Espionage is composed of Nothern Spy apples with some tannic bitter-sweets from our friends at Taproom Farms. A long, slow ferment was complemented with a 7 months in oak. Dry with a light carbonation, this cider has a gentle farmhouse nose with tannins encircling a medium-bodied, light caramel apple palate and a moderately-sharp finish.

Amber colour, and the aroma has a nice appley character, hinting at tannins. On the palate, the tannins are definitely there. Has a juicy character, good body and a bit of barny fermentation. Low level but it's there. It's solid.

375mL bottle, pours a clear bright golden with a small white head. Aroma has notes of toffee apple, a hint of oak, and brown sugar. Flavour is dry, with plenty of oak, some light tannins, and a touch of dry caramel apple. Oaky, dry, and crisp. Not too complex, but it's pleasant.

Poured from 375mL bottle. Clear gold with very minimal white head. Fairly dry apple skin, light tannins, simple, okay.

375mL bottle. Pours clear gold with small white head. Apple skins and a gentle farmhouse character on the nose. Flavour has crisp apple, slightly tannic skins, gentle farmhouse notes, a bit woody. Decent and refreshing.
