Brekeriet Kombucha is a sour beer fermented with 100% kombucha cultures (is not a fermented tea beverage). Kombucha is a mixed culture of bacteria and yeast, primarily acetobacter, brettanomyces and saccharomyces strains.

Nice creamy mediumlasting head. Aroma is slightly sour-ish dry, mild vinegar, citrus acid, sorrel, soda powder, citrus peel, oak, thinner. Taste is slightly acidic sour, mild vinegar, soap, sorrel, citrus acid, oak, bark, weeds, thinner. Medium bitterness, dry acidic mouthfeel. Nice.

75 cl-flaska delad på Beerditch stora Brekerietprovning med bröderna Ek. Det mest acetiska jag provat från Brekieret vilket förklarades med att Kombucha måste jästa med syre i öppna fat. Rejält syrlig, lite gröna nötter, pepprig eftersmak. Helt okej men inte en favorit.

Draught@CBC2015 (Blue session). Hazy yellow colour, small white head. Aroma is fruity, floral, some mild malty and tart wooden notes. Flavour is salty with some tartness as well as mild floral notes. Nicely dry.

Tap@Taphouse, Copenhagen - pours golden amber with white head. Sour fruity aroma and taste, nice sour and sweet balance, acidic, grapes, light vinegar,funky, light floral, tart on the palate, dry tart finish.

Draft. A hazy yellow beer with a white head. The aroma has notes of brettanomyces, lacto, lemons, and vinegar. The flavor is sweet with notes of lemons, lacto, brettanomyces, straw, and vinegar, leading to a tart finish.

Draught at Barrels Gamla Stan. Pours hazy golden. Very fruity taste of citrus and Sharon fruit. Citric with some bitterness.

(On tap @ VilleValla Pub, Linköping, May 21 2015) Pours lightly hazed pale orange with a tiny white head and no lace. Aroma is kombucha-heavy as expected, cider vinegar and lemon juice, dishwater (in a good way), dry earth/metallic notes, some Bretty funk. Taste again heavy on kombucha and cider vinegar, citrus, touch of caramel, earthy, bread yeast, a bit sweet and quite acidic, becoming purely sour-tart on finish with some wood? Light body with average carb. Pretty WTF as a beer if you haven’t had kombucha and pretty much that way if you have! A really interesting and unusual sour, but quite drinkable despite its mouth-puckering nature.

From tap at Copenhagen Beer Celebration 2015, Blue session. Hazy golden orange color with off-white head. Yeasty aroma, funky citrusy, barnyared - horse blanket notes, tart citrusy fruity. Light sweet, acidic taste, funky citrusy. Medium oily body with soft carbonation.

Draught @ The Rover. Pours very hazy pale orange with a rather small frothy offwhite head that leaves some sparse sticky trace on the glass while dissipating. Smell is sour and slightly fruity with crackers, lemon juice, lime juice, pineapple, apple cider vinegar, sour milk, dry soil, minerals, barnyard, grape skins and lemon zest. Taste is sour, slightly phenolic and slightly funky with crackers, lemon juice, lime juice, apple cider vinegar, rubber, band aids, barnyard, leather, hay, dry soil, minerals, barnyard and lemon zest. Mouthfeel is dry, tart, slightly mouth-puckering and light to medium bodied. Finish is sour with crackers, lemon juice, lime juice, apple cider vinegar, rubber, hay, dry soil, minerals and lemon zest. Lose the rubber and band aids and this would be quite great.
