Bor Yea Bor Lor Yin 2022 is a smoked pineapple farmhouse ale, the idea for which we came up with when drinking Alvinne brewery's Phi Smoked Pineapple. We loaded kettle-soured wort into two barrels with our house culture and pitched one of them with a Saison strain and the other one with a Brett-focused blend. We then blended the two batches with applewood-smoked pineapples to condition in a stainless tank before bottling. The result is a complex and well-balanced beer, featuring funky, umami, woody characters paired with intense smokiness and fruitiness. The whimsical aromas follow through with slightly savoury and peaty characters on the palate. We recommend pairing this beer with Camembert, aged Gouda, and smoked salmon.
