Riffing on our Belgian/Greek inspired, and Mother Kelly’s favourite, Tzatziki Sour, we took further inspiration from Greek culinary traditions; this time looking to Pantzarosalata! A salad served with a beetroot yoghurt dip, pantzarosalata combines the sourness of greek yoghurt with the earthy sweetness of beetroot!

Kwg at the cock tavern Hackney. A clear pale pink plum coloured pour with a a fine pink head. Aroma is earthy beetroot, mushroom, some sweetness, cucumber. Grass. Flavour is composed of sharp clean citric acid, clean sour, earthy beets, fresh Cucumber,. Fresh and refreshing. Palate is sharp, clean, moderate carbonation. Really interesting and nuanced.
