Istrian wild ales is our program of creative brewing with a limited series of beers like barrel aged, wild fermentation, mixed fermentation, open fermentation, coolship and spontaneous fermentation with the name KAREGA. The meaning of Karega is "Chair" in our dialect, that symbolizes waiting and resting as nothing good comes fast.
This beer is open fermented in coolship and transfered to wine wood barrells for 3 months with addition of tons of pears. It is a complex beer that stimulates all your senses.

375ml bottle. Opalescent, yellow-ish, dark golden colour with some tiny chunks floating around; small, creamy, half-way lasting, minimally lacing, white head. Vinous fruity, woody and tangy aroma, notes of oak, white grapes, hints of brine, mustard seed, pearl onion, a touch of grape sugar. Taste is slightly dry, tart-ish, vinous fruity, slightly woody, minimally funky yeasty and tangy, hints of oak, white grapes, a touch of grape sugar, diluted hints of white balsamico, brine. Minimally oily, watery texture, slightly dry palate, fine, scattered, mildly prickly carbonation. Very mild, not overly complex, maybe a tad oak dominated - OK.

Bottled 375ml. -at Cameral Koper, shared with hrabren. Pale golden coloured, small white head, dryish bready fruity nose. Fruity, yeasty, light bready, touch of honey and herbs with sourish finish.

0.375 l bottle shared with Ogi at Bar Cameral, Koper. Clear golden, small head. Aroma is bready, malty, stale bread. Intense phenols. Mellow rustic notes, slightly cheesy and moldy. Light to medium body, moderate carbonation. Light sourness. Light fruitiness, unripe apricot, citrus. Dry finish.

Cork-top bottle, 0.375l. Aroma of barnyard, sweat, pear, stone fruit and grape skin. Pours cloudy dark yellow color with thin creamy off-white head, good lacing and sparkling appearance. Taste starts light sweet grainy and citrusy, following is funky, vinous, woody, floral and ripe fruity with slick mild spicy mouthfeel. Medium body, slick texture and average carbonation in palate. Wild & refreshing...

Bottle. Lightly hazy golden, moderate and foamy white head, lasting. Gentle nose, vinous soury, some mild sweet fruity nose, later on perhaps some pears. Vinous taste, mildly soury with tart finish, Some sweetness and lasting aftertaste, herbal/bittery,spicy. Light and fresh. Nice and refreshing.
