Imperial stout aged in Buffalo Trace Barrels for 2 years before finishing in a Still 630 7-Year Bourbon Barrel.

The heart of this beer come from the collaboration brew day with our Half Acre beer friends more than 3 years ago. Once fermented and ready for its time in oak, we racked this beer in Buffalo Trace Mash Bill #2 barrels for 2 years. During the Double Barrel Cognac racking, I had 1 single 7 yr Bourbon barrel in need of filling and this lone barrel was filled with the matured 2 year old Generational.

Now 3 years removed from brewing, we are ready to share with you!

Note: This is the double bourbon barrel version with black wax, not the cognac-bourbon barrel version in gold wax.

Bottle at Side Project. Pours black with small tan head. The aroma is strong bourbon, oak, chocolate, licorice, roast. Thick body, chewy roast, dark chocolate, marzipan, nice sweetness, enjoyed this.
