Okay so we’re big on this pyramid technique, we’re usually very nuanced and meticulous in our approach to the delicate flavour profiles each varietal brings to the party, but sometimes you’ve just gotta go “…nah” and load a beer with a Frankenstein’s monster of your greatest hits to embrace your status as a modern day juice-slinger. Galaxy Mosaic IPA was the beer that put us on the map in 2018, Mosaic Simcoe DDH IPA was the beer that set the wheels in motion for our Augment range, and Rosa is undoubtedly our headline beer, bar none. Smashing those two originals range beers together, using three of the five hop combo that makes up Rosa, and hopping it at a similar rate just seemed…well, it just seemed right. Big, sticky orange notes are abundant here, with ripe stone fruit, crushed gooseberries, and just a little pithy citrus bitterness to round things off nicely.
