Brewery draught, 1/17/25.
Clear, blonde-brass. Large, white head.
Actual saison yeast from Belgium, no clove and bubble gum. Biscuity malts with yellow stone fruits and lovely mineral/plaster.
Juicy, soft, good acidity and strong biscuit with strong apricot and cellar must. Very far from Dupont, but equally far from American saison. Clean, malty, attenuated. Beautiful.

Tart, mineraly, funky and vinous with hints of farmyard and grapes, some stuffy yeastiness. Decent.

On tap at the taproom. Hazy yellow with white head. Bit yeasty, vinous, grapes, medium tartness, drinks nicely.
