Back in 2021 we had the chance to acquire some very rare Pappy Van Winkle's Family Reserve 15 Year barrels that had just been emptied. Knowing these casks could be the only time we ever get them, we wanted to put something special in them. We brewed up our "recipe 2" stout at a relatively moderate gravity and also subbed in maris otter malt as our base malt to add additional richness to the beer. We let the beer age in these rare casks for 29 months before blending, then hitting with a moderate amount of carbonation, and then being bottled.
While we typically layer blends of different beer aged for specific amounts of time to give the blend notes of fully aged beer full of umami or younger beer that has more life to it to achieve a blend similar to what this beer offers, this beer, on its own offers a unique perspective at a blend of casks solely containing fully mature beer from one recipe and one brand of spirit casks - each cask being fully unique in the character it added. Fully saturated with notes of bourbon, cocoa, dark berries, leather, char, and smoke, exceptionally smooth. We hope you enjoy this special beer.

500 mL bottle at LC member party, 1/17/25.
Dark, thick, clear. Little/no head.
True to the previous release, it's a monster, even at a full 4% less alcohol. Barrel-heavy, barrel-forward, and in my opinion, barrel-dominant. I get wanting to showcase such a beautiful bourbon, but it's just too much and overcomes all the beer's other character. Maybe it will age better, as a result, preserving the barrel character longer. But as it is now, it's just all oak, bourbon spice and warming whiskey. Typical rich, syrupy but properly attenuated texture.

Worth the hype. Thick smooth bourbon barrel, leathery,, tons of roasty chocolate.Layers of complexity as it warms and opens, some dark berry notes toasty.
