Brewed in collaboration with the Danforth Plant Science Center, The Land Institute, Millpond Brewing, Side Project Brewing, and Switchgrass Spirits.
Brewed with 25% Kernza, a perennial grain closely related to wheat, Pilsner malt, German Hallertau, and French Aramis hops. This beer has a soft sticky mouthfeel with earthy spice and a sweet herbal nutty flavor with subtle citrus and flowers.

Pour is a clear bright golden with a large white head. Aroma is typical lager. Some dry cracker malt. Flavor is more of the same. A dry cracker malt with maybe the slightest bitter hops. I don't know what kernza grain tastes like of offers in a beer but this was a pretty straight forward lager.

Brewery draught, 1/18/25.
Clear, deep golden. Small, white head.
Rich honey and freshly baked bread with pepper and light herbs. Moderate fruitiness. Clean.
Malty, with a sourdough undertone and clean, herbal hopping providing light fruitiness and mild bitterness. Excellent texture, depth and attenuation.

4 oz. pour on tap as part of flight at the brewery. Clear pale yellow w/no sparkle, nice head & no lacing. Aroma is wheat & noble hops, vague nuts. Taste follows aroma. Smooth texture, soft carbonation, finish as taste. Love the experiment with the Kernza. Maybe adds a distinctive element; certainly isn't lesser than standard grains. I hope this takes off.
