Thyme was used in ancient times in beer. In this stout it produces a mellow, easy drinking dark beer.

Cask at the Reading Beer Festival 2012. Pours dark brown with a small, foamy off-white head. Thyme comes through well in the nose, with moderate roasted malts providing the canvas. Medium sweet flavor with light roast and chocolate, along with gorgeous, fresh thyme. Light to medium bodied with fine carbonation. Lasting, true thyme character in the finish with mild cocoa. I just love the thyme here. A great idea executed well.
