Ale Fermented in Oak

Against Death is a series of blended bitter beers macerated with fruit and Botanicals Blend #1.

This blend is comprised of a spelt and einkorn beer which underwent primary fermentation on spent 2020 harvest pluots from Collins Family Orchards as well as oak fermented wheat saison.
The blend was macerated with organic Calendula flower, organic gentian root, and Californian 'Star Ruby' grapefruit peel.

This beer was refermented to condition in the bottle using raw Washington Star Thistle honey.

750ml bottle pours out golden topped with a fizzy head. Nose is odd some herbs and spices a little wet wheat. Taste is more of the earthy herbs spice wet wheat and some grain.

Bottle thanks to Rainer. Pours a cloudy yellow with medium white head that lasts. The aroma is strong earth, wheat, plum, floral, oak, pepper, yeast. Slick body, earth, wood, funk, intense bitterness, boozy, wild.

Hazy blond colour. The aroma is floral, almost hoppy, then more herbal. Dry mouthfeel, but soft; mild acidity; grapefruit dominates; bitter vegetable elements, and nice funk too; the elements blend well together.

Poured from 750mL bottle. Clear-ish gold with small white head. Quite bitter floral/herbal notes with touch of citrus. The drying bitter quality is almost overpowering. This will be a love it or hate it beer.

750ml (thx, Drew P. for a pick-up and a cross-border delivery!) @ Ryan's. Appearance: hazy golden with a white head. Aroma: lots of flowers, some grass, tons of botanicals, earthy. A quite weird one. Taste: along the same lines, super flowery, grassy, and earthy. Overall: the weirdest Floodland I've ever had, but after reading the list of the ingredients I got why the been was called this way, hahaha.

Dullish pale, hazy, with just a very thin head. The aroma is quite herbal, must be the gentian and marigold. Nice bitterness - that's the gentian and probably grapefruit peel as well. That's a great bitterness, a light sweet pale malt note. Dry finish. Grapefruity, too. Light tartness, woody as well. Heading in a gruit direction and I'm happy with that.
