We have been drinking lots of low ABV beer lately and brewing them is a delightful challenge. Alcohol is a major flavour enhancer; it helps extract oils from hops, and it gives beer weight (i.e. makes it taste less like water). When making low ABV there are a few techniques we employ to make the flavour pop. One of the biggest impacts is the yeast, and when Escarpment Labs released a new yeast strain that they bred in house specifically for making juicy low ABV hoppy beers – we had to jump!
