Barrel-aged Haskap Sour

A deep and complex sour, thrice conditioned on local haskap berries and pomace throughout its production. An extended stay in red wine barrels with wild yeast and bacteria has imparted a vinous and jammy profile, bright acidity, and a dry, tannic finish. Enjoy now or cellar for up to three years.

Fish in a Barrel barrel-aged series - This beer has been swimming in Hugarian oak barrels for just shy of 2 years.

Poured from 500mL bottle. Dark coppper brown with quickly dissipating white head. Medium acidity upfront, mild tannic haskap berry underlay, very feint vinous notes (moreso on the nose). If the acidity settles a bit, it may be fairly decent.

Purply-brown colour and no head. Deep berries and wood, a bit of balsamic. A little too vinegary, a touch of berry, sharp acid in the finish, so overall it’s okay, a bit aggressive.
