Special is a Foedre Aged Biere de Miel.
Brewed with a base of Shoreline Malting Pilsner, wheat malt, raw wheat, and a bit of flaked wheat. Hopped in the boil with aged East Kent Golding hops, Hallertau Blanc, and Sterling. We added 85kg of warmed (but not boiled) NS Honey in hopback before sending everything directly to a foedre, where it fermented with a variety of our house cultures. After fermentation finished, we added 5kg of honeycomb to the foedre for a bump of honey character. We allowed the beer to condition in oak for about 4 months, before transferring back to stainless, priming with fresh honey, and packaging and can-conditioning.
The result is a very fun, floral, and funky beer. Dry as a bone, with a soft honeycomb base, subtle petrichor and herbal aromatics.
This beer was 100% Miles Bishop‘s creation — recipe design, brewing, sourcing honey, deciding when to package, etc. If you don’t like the beer, blame him. If you do like it, then I’m going to take the credit because I taught him everything he knows. But actually, Miles you did awesome — this beer rules and you’re a good brewer.

Appearance - 6 | Aroma - 7 | Flavor - 7 | Texture - 8 | Overall - 7.5
Can. Has some haze, and a dark blonde sort of colour. On the palate, quite tart, woody, lots of brett. Not much residual malt sweetness, just a little bit. I don't really get any particular honey character. It seems in line with their usual, which admittedly is pretty good.
