This is a true Alt End beer(how we designate our experimental brews), as it never was supposed to be brewed. When Scott interviewed Brendan for the Head Brewer position, they both agreed that they would NEVER brew a Hefe. But then, in the most unsuspectable place at OH Philly, a brewer named @joe… spoke highly of the style, describing it as the ultimate breakfast beer. While sampling one, and discussing the ability to do a ferulic acid rest on our decoction system (which creates a nice balance of clove and banana) we mutually agreed to brew one!
