Reflected Symmetry is our Ancient Grain IPA brewed with Spelt Malt. Spelt is the precursor to Wheat and has been cultivated since 5,000 BCE. Spelt malt creates a full body and nutty flavor to the malt backbone. Hopped with Idaho 7, Mosaic, and Australian grown Enigma to provide flavors and aromas of Ripe Apricot, Grapefruit Zest, Resiny Pine, Raspberry, and Red Currant.

Can to tulip.
Appearance: thick peachy orange colored haziness with a finger's worth of white foamy head which tapered off at a nice pace to leave some light lace
Aroma: apricots, dark berries, sweet onion and grapefruity hop tones; light clean malts
Flavor: meshes the prior noted aromas to a fine sweet juicy to bittersweet juicy character; finishes dark berry-ish with the apricot hops
Texture: light to medium bodied - probably closer to medium with some sessionability and light smoothness, light hop assertiveness
Overall: pretty nice NEIPA I could return to.

Draft at Paragon, 7/26/23. Hazy orange color, thin white head. Peach, apricot, and a strong red berry thing happening later. Bit of sweet grains. Almost jammy flavor-wise, with spice and herbal notes to it as well. The stone fruit fades to the back. Weird IPA flavor profile, that sort of works, but isn't quite there.

Pours a hazy orange from a can. Citrus aroma and flavor, a little soapy finish. Good beer.

Draft at Brick & Ash, Newburyport, MA. Flavor has a good level of citrus with mild tropical nuances. Texture is mildly juicy. Extremely easy to drink.
