Natural Beauty was designed collaboratively with a dozen of Nicholson’s top managers. We wanted a beer that was summery, highly sessionable, and, of course, unfined. The recipe was the easy part. We found a limited availability hop from Slovenia (Dana) with a great profile. We were also working on a yeast selection project for a new yeast that would exhibit the best characteristics and performance of ale and lager strains. The inspirations for the style were the amazing Czech yeast beers we enjoyed so much during visits to Prague. So we put together a very pale malt grist, added loads of hops and our hybrid yeast. The result is a true crossover between an ale and a lager.

The hardest part of the collaboration was the name, which we debated for many hours. We needn’t have spent so much time. We knew it was going to be a beautiful beer, and being unfined would allow its ‘Natural Beauty’ to shine through.

The result is a 4.1% beer, very light in colour but deep in hop and yeast sheen. Dana really powered through with the high hopping levels we used. It had the strong herbal characteristics we experienced on the rub, but also added a layer of pineapple and orange peel that was an unexpected treat. It is definitely summery (despite the wettest summer on record!), highly sessionable, and intensely flavoured. A few extra casks escaped into the wild, and some of it even ended up keg-conditioned for even more Czech-styled authenticity. Na Zdravi!

Cask at the Stockbridge Tap. Pours hazy yellow, nose is zesty lemon, caramel, taste is similar.

Cask (handpump) @ CASK Pub & Kitchen, 6 Charlwood Street, London, Greater London, England SW1V 2EE.Unclear medium yellow colour with a small to average to large, frothy - fizzy, fair lacing, mostly diminishing, white head. Aroma is moderate malty, toasted, fruity, light to moderate hoppy. Flavor is moderate to light light heavy sweet and moderate bitter with a average to long duration, malty, citrus bitter, dry, grassy. Body is medium, texture is oily, carbonation is soft to flat. On tap @ the Haymarket. Pours golden with a nice head. The nose has meadow flowers and custard. The taste has more of the floral thing and there’s a creamy/buttery backbone. The palate is medium bodied and textured with a gently refreshing finish.Overall a good beer.

Cask@Cask Pub & Kitchen, London. Hazy yellow colour, small white head. Aroma is fruity, floral, hoppy, grassy and some mild spices along with sweet malts. Flavour is fruity, caramelly, toffeeish and has some mild grassy notes as well.

Light amber, slight haze, thin white head
Aroma - fruity pale malts, spicy and aromatic hops, quite floral
Taste as aroma, soft spicy floral Fairly viscous mouthfeel. Finish is a bit dry, soft pale fruit hop linger, light bitter spicy hop.
Overall - Cross between lager / golden ale that works really well, do like the floral spicy notes.

keg at tap ... light hazy yellow ... thin white head .... sweet fruity lemon zezt nose ... too cold ... though it kind of works ... mellow soft biter leon zezt ... light spicy lemon ...

Cask at the Pontefract Castle, Wigmore Street, London on 7th July 2012. Hazy straw-coloured with thin ring of foam. Hoppy aroma. Rich grassiness in-mouth, with fine grapefruit and a touch of nuttiness - peanut. Fruity finish with slight bitterness. Light textured mouthfeel and medium body.
