This year’s Witch Meadow was aged in bourbon barrels from two outstanding producers but beyond that, most of those barrels yielded some of their most sought-after whiskies. From Willett, we were fortunate enough to use barrels that previously held their esteemed Family Estate Bourbon and those coming from Knob Creek were used for their limited, first of its kind, 18-year bourbon. Barrel residency time for the stouts ranged from 10 to 32 months with a blended average of 21-months. Our approach to high-gravity, barrel-aged beer has always been to seek depth and complexity through variety and intentional layering. As such, Witch Meadow is blended from a collection of subtly different stouts, all double-mashed early in the morning and boiled long into the night.

Dark, undetermined clarity. Small, tan head, moderate retention (very good for its size).
Rich bourbon and chocolate-molasses comfort the nose with a well-aged mellowness. Moderate bourbon spice, moderate oak tannin, maybe a hint of alcohol warmth, but not heat/sharpness.
Yeah, there is a bit of alcohol here, which is a recurring thing with this brewery's mega stouts. That said, it's far from hot or sharp. Just a bit dull and warming, but noticeable. Rich, thick, lightly syrupy textures with excellent malt depth and good attenuation. Lingering cherry, vanilla, heavy bourbon spice and barrel tannin with aforementioned light alcohol. Other than that fairly minor issue, this is spectacularly well-done, as usual.
