A collaboration with Port Street Beer House, David Bailey and Blackjack for the launch of David’s exhibit ‘The Art of Cask’. We wanted to make a beer that was a celebration of cask beer past, present and future. Over a couple of beers, ideas started to form. A beer that would be a nod towards Boddingtons iconic ‘cream of Manchester’ whilst also having a fresh hop hit that would make this beer feel a bit more modern. A simple malt base, with additions of wheat and maize helping to give the creamy texture to this beer was then hopped with additions of Fuggles, Comet and Cascade hops. Fuggles bringing the old school hedgerow characteristics, Cascade that more modern piney, resinous character and Comet acting as the perfect bridge between them. Fermented using Boddingtons yeast at warm temperatures to bring a delicate ester profile reminiscent of old school traditional cask beers.

Cask @ Bundobust, Manchester. Pale golden-blonde with a small head. Session ale, more tropical fruit than bitter in taste.
