I said I’d never do it, I said it would never happen, but sometimes you even have to break your own rules. Yes, this is an Against the Grain Black IPA. During the great black IPA rush of 2007 many a brewer dumped some black malt into their IPAs and thought they really did something special. Well the fervor has died down enough now that I feel cumfartable making this “Black IPA.” Brewed with pale, wheat and vienna malts, we then stir in 80# of kilned black barley at the last possible moment of the mash to extract color while limiting dark malt flavor. We then add 23# of American hops at various intervals during and after the boil. The result is a nice balance between some subtle roasty flavors and the citrusy and piney hop flavor and aroma.

Tap at the Cask, Pimlico - 30/11/12. Mid black with a decent tan head that retains well. Good lacing follows. Nose is slightly muted but carries malts, pine, hops, sweet dark sugars, marshmellow. Tastes of dark toffee, dark sugars, lite pine, touch of smoke, hops, mineral tones. Medium bodied with soft carbonation leading to a bitter sweet finish. Decent.

Craft. Opaque black - brown beer, pale tan head. Palate is smooth and light. Minerals and fine carbonation. Super mild lactose in the mellow dark malt. Mild pine hops. The carbonation starts to bite. Trace of red berry fruits and a whisper of coffee. Finishes crisp. Nice Black IPA - good cream and cream vibe.

Draft. Black body with a tan head, slowly diminishing. Aroma of roast, caramel, resin, pine with hints of coffee and pine. The flavor is moderately sweet and lightly to moderately bitter. It finishes lightly sweet and moderately bitter. Medium body, creamy texture, lively carbonation. Most of the aromas and tastes are understated which is fine with me. Strong roast combined with strong citrusy hops don’t work for me. The balance here is good. Nice lingering bitterness.
