This beer is fermented exclusively with wild local yeasts and bacteria found on dandelions. The brewing process began over a year ago, when we discovered while picking dandelion flowers that the bacteria in the dandelion create flavors of pineapple, candy, and tea leaves, and balance the acidity. The beer was fermented in wooden Bordeaux wine barrels, with the addition of Blue Franconian grapes, which gave it a soft red color. After natural fermentation and maceration, it was bottled with natural cork, which created gentle bubbles for extra freshness.
