The second release from our cider project, spontaneously fermented with yeast from the apple skins, the cider was then aged for three months in an Islay whisky cask before bottling with champagne yeast.

Floral and juicy on the nose, the peat smoke melds into the vanilla and apricot notes of chisel jersey. A flood of pineapple hits before the tannic, woody dryness envelopes the palate. Lingering peat smoke and warming whisky transports you to a cosy, crackling fireside.

Bottle sample courtesy of Fergus, cheers! Hazed orange-yellow gold colour, no head and aroma of phenol, iodine, islay barrel. Taste is sweetish, apple, fruity, then peaty, islay whiskey, oaky wood barrel, smokey notes with some drying tannin. Medium bodied, low carbonation, dry phenolic woody tannic finish. Nicely drinkable.

Bottle at home picked up from HOTM. A hazed bright orange coloured pourw ith a small loose off white large bubble head that fades. Aroma is big peaty smoke, TCP, dry pithy wood, apple skins, charred barrel staves. Light whiff of sharp vinegar on the nose, Flavour is composed of semi sweet, mealy app, wheat, canned pineapple, pithy apple, smoked wood, woody tannin, to drying finish, hickory smoke. The flavour is more balanced with a touch of sweetness than the nose suggests. Palate is semi sweet, to pithy drying finish, fine carbonation. Goff.
