Spectre Sister is a blend of two extra pale beers produced in July & August 2020.
The worts were made with maize, wheat, oats and rice. They fermented in a mixture of old bourbon barrels and freshly emptied cider barrels (from Oliver's Cider and Perry, and Ross-on-Wye Cider & Perry Co).
Conditioning in bottle took place through winter and spring producing an effervescent, bright and delicate saison.

Bottle. Mills online. Light haze on a medium gold. Lovely white swede is thick and lasting. Nose has sweet oaky cider. Whiff of tobacco led bourbon. Spritzy lemon and spiky fresh hop leaf. Taste is super juicy, lightly tart and bittersweet. Very clean and refreshing with fine rolling carbonation. Unreal levels of crisp juicy tartness. Juicy tart finish. Mills know how to put a barrel aged saison together.
