Foeder Aged Solera Sour Wheat Ale with Vanilla - This golden sour wheat ale is made in a very large oak barrel called a foeder. We call it a solera blend because it’s a perpetually blended ale - each month we pull 1/5 of its contents, and top up with freshly brewed beer. This means that a portion of every single batch of Incipient that we’ve ever brewed is in this barrel, going back over 3 years! This creates an incredibly complex and layed base beer, to which we add a different single fruit or spice to each month.

Pretty hazy golden and straw yellow coloured body with a very fast-dying pure white head that shows less than a centimetre in height and dies quickly. Aroma of sugar cookies, funky lactobilly and especially bretty yeast with some light grassy and floral malt here with a dash of lemons, some strong gueuze and spontaneously fermented yeasts and of course a good hit of actual vanilla pods that add to the complexity, in the nose at least. Light to Medium-bodied; Strong funky yeasts and complex flavours from the bretty notes with a lot of cedar and foeder funk here as well, a solid sweetness right behind and an odd, pastry-like note of vanilla sugar with a hint of artifical notes in terms of the vanilla. Aftertaste shows a lot of funk, a ton of sour and tart qualities, a nice yeast complexity and some light undertones from the malts with a dash of sugar, but that's about it - there is a lot of different notes here, but most reside squarely in the yeasts with a hint of sweetness. Overall, a pretty funky, very soured, tart and vanilla-y beer that has a lot of all those notes, but no malt for support, no other complexities or ranges and no play from the sugars. Not a bad beer by any means and I'm not trying to knock it, but the complexities could be higher with a different set of malts here and a change/addition to the hops with some more richness that lets the complexities from the yeast and tartness be more noticeable. I sampled this sixteen ounce, pint-sized can, purchased from Beer Baron in Livonia, Michigan on 23-October-2022 for US$7,99 sampled at my house here in Washington on Beer (and Day #11) of my 2022 (self-created) advent calendar.
