With a recipe that dates back to the 14th Century, this is one of our most traditional craft beers. Our interpretation was inspired directly by Pierre Celis and his original efforts to resurrect this beloved style. This beer is an unfiltered Witbier or “White Beer” to the Flemish-speaking Belgians because of its opaque, white appearance. It measures 4.9% ABV and is a wonderfully refreshing, easy drinking beer enjoyed throughout the year. Its grain bill includes nearly 50% unmalted wheat and oats while it is very lightly spiced with Coriander, Orange Peel, and a touch of other unique flavors. The yeast in this recipe was cultured from the original strain near the town of Hoegaarden in Belgium and adds a pleasant fruitiness during fermentation. Enjoy this beer with or without an orange slice. Although the beer connoisseur might frown at you, we won’t judge you if you ask for one.

A hazed blonde wit with a thin white head. In aroma, sweet fruity banana malt with cloves and light sulfur, nice fruity esters, very nice. In mouth, a nice sweet fruity banana malt with light grassy hops and light cloves, a bit thin but overall, refreshing. On tap at brewery.

Location: Draft at Cowbell, 2/17/15

Aroma: Nose is heavy clove, Belgian yeast, pepper, banana, other spices, and some citrus notes.
Appearance: Cloudy yellow-white color, foamy and fizzy white head, and average lace.
Flavor: Flavor is clove/spice-forward, medium sweet, a little fruity, with a mild bitterness.
Palate: The body is on the lighter side, a hint thin up front, fizzy, with a tingly, spiced finish.
Overall Impression: Pretty solid and true to style example that is both a little heavy on the spice and solidly balanced at the same time. The mouthfeel leaves something to be desired, but otherwise, I quite enjoyed it.

Tulip draft at the brewery taproom in Charlotte, North Carolina. The pour is a hazed yellow gold with a well formed white head. A bunch of lace is left on the glass. The aroma is herbal clove yeast along with some citrus grass. The taste is the yeast right away, clove herbal grass and the some fruit sweet under that. The palate is medium bodied with natural carbonation and a lingering yeasty finish. Solid beer, certainly somewhere between a Saison and a Wit.
