Conversation Starter pairs the experimental hop variety HBC 586 with Citra in a dry, crisp West Coast IPA. HBC 586 is one of the most exciting newer, unnamed varieties - I get tons of ripe guava, and lychee, along with a basket of other tropical fruits and a hint of herbal pineyness. Rich, flavorful thiols accentuate the ripeness of the tropical fruits in an enticing way. We kept the body dry and the bitterness tight to let the aromatics of this new hop shine.

Appearance: Straw Yellow, Clear, Slight Hop Haze Acceptable
Aroma: Guava, Lychee, Lemon, Mango, Peach, Ripe fruit
Mouthfeel: Dry, Tight bitterness that doesn’t linger
Flavor: Peach, Grapefruit, Slight herbal/pine notes

Poured from a 16 oz can dated June 22, 2021. Aroma is hop forward with lots of citrus and tropical fruit. Grapefruit, orange, tropical citrus, mango and lychee with light cracker malt notes. Light alcohol notes. Pours a clear, pale, yellow gold with a medium large, thick, frothy, white head that recedes steadily to a small film that lingers on the edges. Low lacing and small legs. Flavor has a light sweetness with light cracker malt notes. Moderately strong bitterness and light alcohol notes. Moderately strong hop notes with lots of mango, lychee, orange, grapefruit, and guava. Faint dank, resin notes. Moutheel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a solid West Coast IPA. Really nice, fruity hop notes with light, balanced malt notes and alcohol. Solid, assertive bitterness but not so strong that it takes away from the fruity hop notes. This is how I want my West Coast IPAs.
