We age this spontaneously fermented beer for two years in Cognac barrels. In these American oak barrels, our golden Coolship beer develops notes of caramelized sugar, pear, and plum. All of which pair nicely with the tart and complex notes of apricot, oak, and a hint of funkiness—from the wild yeast—that our Coolship beers are known for.

Clear deep bronze. Small, off-white head, quickly to ring.
Rich acidity, not punchy, lots of subtle Cognac mixing with big vanilla, oak and rich malt. Love that the coolships are always so properly malted.
Rich and complex. A LOT of Cognac, but not too much. Juicy, almost. Rich grape, liquor, spice, oak...it's all there. Excellent malt, acidity, oak, spice....man, these beers are just unbelievable.

Bottle pour. Pours orange gold. Funk, lemon juice, hint of acetone, grape, nectarine, apple. Medium body. Decent.
