Big and Funky! This beer is our first Mixed-Fermentation beer using a combination of Saison Yeast and Brettanomyces yeast. This wild ale made its way through the bulk of fermentation quickly while throwing off some wonderful Belgian Saison notes. Over time as it conditioned Brettanomyces went to work and slowly finished this beer while shifting it's character over time. A lovely and complex beer that could be perceived many different ways. Fruity notes are contributed from the strawberry-like Belma hops and Brettanomyces. A lovely horsey and barnyard funk from the Brettanomyces peak through occasionally accompanied by a slightly sour and tart finish.
