Dear Jon Letter” is a tribute to our head brewer, Jon Drinnan, on his final day here with us at SARA. Beginning as our “Cask 200”, Solera-style Saison (its age nearly matching Jon’s seven year tenure) the beer was then transferred to both @venusspirits Agave barrels and @frederiksdalcherrywine barrels and later blended. The result is a complex and special offering that speaks to Jon’s unique maturation and talent.

Poured from a 750 ml bottle. Aroma is soft with light notes of cherry, classic SARA characteristics of lemon, pineapple and green grape, and hints of tequila. Light grain notes and hints of alcohol. Faint, earthy, herbal funk and oak notes. Hints of alcohol. Pours a slightly hazy, pale gold color with a medium sized, medium thick, white head that recedes to a small film that lingers on the edges for a bit. Light lacing and faint legs. Flavor is slightly acidic with light grain notes. Moderate notes of cherry that work well with the lemon, pineapple, green grape and earthy funk that SARA saisons are known for. Light oak and alcohol notes with hints of tequila. Faint alcohol notes. Light mineral notes and soft water character. Mouthfeel is medium light bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a great beer and a greater person. I wish I got more of these as I think I like it more than Proper Discourse (I should try them SxS to confirm).
