OIBF Collaboration Brew. What we knew about Broyhans wasn’t a lot apart from being a pale, sour beer with little hops, some spices instead and that it had wine like qualities. We started with the base of a kettle soured pale beer with wheat and oats. We added some Hallertau Blanc at flame-out and filled the hop back with Sorachi Ace and white pepper, then we fermented with a Belgian yeast strain that would add some spicy flavors.

Bottle from Kisjes Slijterijen, Meppel. Aroma is citrus, sour lemon, wheat, peppery notes and a bit lactic. Flavour is tart and medium sour. Body is light. Nicely sour lemon taste, could use a little more depth though.

One of Oedipus’ many collaborations, this time with an Oregon craft brewer; bottle bought at a Mitra shop in the northern Netherlands. Apparently a kettle-soured ale, connecting with the 16th-century northern German Breihan theme but hopped with Sorachi Ace and fermented with a Belgian yeast strain - modern craft brewing is all about combining elements from different traditions, rediscovering forgotten methods, and at best elaborating on them, of which this is a very clear example. Initially medium thick, snow white head quickly stabilizing as a dense moussy rim with open middle yet dissolving into close to nothing after a while, over a clear, pale and purely straw blonde beer, turning into a more ochre-tinged, hazy blonde with sediment. Aroma of salted lemon flesh, fresh green seaweed, soap, unsugared yoghurt, pickled gooseberries, cold Sauerkraut, sweat, spoiled milk, dry white wine, yellow plum peel, raw unripe pineapple, green banana, fresh dill (the Sorachi Ace I assume), minerals. Crisp, lively onset, dryingly lactic sour from the start, yoghurty but with a wakame-like umami and salty touch as well, Gose-ish, hints of unripe banana, pineapple and Granny Smith apples with a lemony sourness cutting through it as well; minerally carbo, light but still proportionally ’full’ body. Cereally middle with white bread-like qualities, soft mouthfeel likely due to the oats, bit creamy even, while this lactic sourness persists and dries the mouth cavity in a very pleasant, utterly refreshing way. Ends dry due to that same sourness, crisp and vivid, fruity but not estery, with a dash of mild, ’green herbal’ hoppiness to it, adding very soft ’structural’ but not really ’tastable’ bitterness with a retronasal dill or even vaguely fennel leaf-like aroma to it (again: must be the Sorachi Ace), yoghurty and lemony, bit yeasty in the end, with subtle bready notes. Very quenching and pleasant little beer, but that soft, yet clear saltiness links it much closer to a ’modern’, 21st-century Gose than to Breihan, which did not use any salt at all (and was very low in hoppiness) if the historical records are accurate. I’d rather consider this a very loosely, ’generic’ German-inspired ’kettle sour’ (Breihan is often quoted as the historical inspiration for Berliner Weisse which seems very relevant here), but in all respects a very good one at that - meeting my expectations when I see the name Oedipus. Pleasant, original and refreshing, recommended.

33cl Bottle from Vonk. Hazy pale yellow colour, white head. Aroma of sour peach, light lemony, hint of wheat, white wine. Flavour is quite sour at first, lemon, sour peach, peach, hint of peppercorns, lemony tart finish. Light bodied. Nice. Not sure why this is classified as a Berliner Weisse though..
