OIBF Collaboration Brew: The idea for our collab with Upright (Portland, Oregon) started with the legendary album ‘Donuts’ by Jay Dee. Using water, malt, hops and yeast we wanted to create a candy like, donutty beer. The malt bill was about getting bready, dough-like flavours, so we used some wheat, Munchener malt and Biscuit malt. In the kettle we added Candy syrup and Goldings hops and in the hopback there were more Goldings and Mosiac hops to get some candy-like flavours. Fermented with a Belgian yeast strain for some bubblegum and even more candy-like flavor

Collaboration of Oedipus with Upright in Oregon, bottle bought at Oedipus Taproom in Amsterdam, with thanks to the lovely girl behind the bar for the suggestion as apparently this is normally sold in a whole package of Oedipus collabs and not individually. Towering high, very rocky, bath foam-like, tightly lacing, egg-white, coarse but very stable head, cloudy peach blonde robe with amberish hue, some dark dead yeast dots in the end. Aroma of peach, camomile flowers, hard pear, jute, dusty old peanuts, turnip, green apple peel, orange zest, cloves, soap but way less bubblegum than in many ’real’ Belgian ales. Crisp, dryishly fruity, refreshing onset, unripe peach, pear and dried redcurrant berry impressions, dried orange zest fraîcheur, minerally carbonation coarsening the mouthfeel a bit; bready malt soft core with sharper grainy edges, fruity esters lingering a bit, some spicy phenols but subtly so, tad yeasty in the finish with floral and grassy hop bitterness bringing dryness and balance. Compared with actual Belgian ales of this strength and profile, this is very well accomplished, not that far removed from comparable sessionable ales by Senne, De Ranke and the like, which I think is a great compliment and testifies how the international craft beer movement can tackle just about any style in detail.
