Fear and Trembling is Hill Farmstead’s first collaboration – a Baltic Porter brewed with malt that was hand-smoked over maple wood by our Danish friend, and former colleague, Anders Kissmeyer. This bottled version was aged in Bourbon barrels. As a student of philosophy and former resident of Copenhagen, it is fitting that our brewer named our first collaboration after Denmark’s great thinker: Søren Kierkegaard. All three contemplated absurdity, faith, and salvation while wandering the shores of the Baltic Sea…

50cl bottle pours a watery, opaque brown with one ring of tan head. HUGE smokey aroma, bacon, charcoal, wood chips, smelled a little sweeter than the Cab barrel. Flavor is sweet, sugary, a touch smokier than the Cab barrel, bacon, toasted grains, more brown sugar. Full bodied, smokey finish with a touch of booze in the back of the throat. A little more balance, diversity of flavor. Marginally better than the Cab barrel.

Bottle 500ml. @ Papsoes blindtasting. [ Bottle #3. ]Unclear dark black brown color with a average, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate to heavy malty, roasted, chocolate malt, sweet malt, light smoke and bacon - meat. Flavor is heavy sweet and modrate to heavy bitter with a long duration, sweet roasted malt, light smoke and alcohol - bourbon. Body is medium, texture is oily, carbonation is soft, finish feel is light alcoholic. [20101102]

Bottle 50 cl. Courtesy of yespr. Pours pitch black with a rough beige head. Fat Bamberg smoke in the nose combined with sweet roast. Medium body, a little low in carbonation, sweet hard roast malts and vanilla. Some barrel feelunderneath. Hardly any bitterness. 021110

50 cL bottle, courtesy of BearsOnAcid. Pours dark brown to black with a small tan head. Aroma is smoked and dark roasted malty. Smoked and ham aroma. Thick malty and dark roasted. Alcoholish note, bourbon. Dark malty and heavy roasted malt. Liqourice and dark chocolate. Lingering dark malty into a mild fruity finish.

Bottle courtesy of Owen, thank you sir! This had a bit less smoke and a bit less chocolate than the cabernet version, and the bourbon was pretty subtle. Tasty.
